Fermentation – Maceration: Merlot 15 days, Cabernet Sauvignon and Sangiovese 18 days. The wine matures in tonneaux of 5 hl, first and second stage 14 months.

Characteristics: The color is a deep garnet with violet reflections, with a delicate bouquet very fruity and intense, with hints of cherry, coffee, vanilla and spice. The flavor is full and persistent, soft on the palate, complex, well developed.
Food pairing: Excelsum can be paired with rich pasta dishes, such as lasagna and meats, but shows its best with full-flavored dishes such as roasts, grilled meats, cold cuts and Tuscan regional specialties.
Serving: wine cellar temperature of 18° C in a large open glass. Please open the bottle at least 1 hour before consumption.
